Waterfront Station is the home of the first Starbucks outlet in Vancouver, which opened in the 1987 and was one of the first Starbucks locations outside of Seattle, Washington.
Waterfront Station was built by the Canadian Pacific Railway and was the Pacific terminus for the CPR's transcontinental passenger trains to Montréal and Toronto until circa 1979, when VIA Rail took over the railway's passenger operations and rerouted trains to Union Station (now called Pacific Central Station) near False Creek.
Waterfront Station is located on the south shore of Burrard Inlet, just east of the north foot of Granville Street.

 Vancouver SkyTrain - Wikipedia, the free encyclopedia
The Millennium Line follows the Expo Line from Waterfront Station to Columbia Station in New Westminster, then continues along its own route to Vancouver Community College (VCC-Clark Station) in Vancouver (the extension of the Millennium Line from Commercial Drive Station to VCC-Clark Station was opened on January 6, 2006).
The two lines follow a common route between Waterfront Station in downtown Vancouver and Columbia Station in New Westminster, serving the cities of Vancouver, Burnaby and New Westminster en route.
The line will run from Waterfront Station through a tunnel under Downtown and much of the city of Vancouver, then surface and cross the Fraser River, continuing to Richmond City Centre.

From your hotel you can walk to Waterfront Station and take the Sea Bus to North Vancouver and back to Waterfront Station, as BAK suggests.
You could travel from Waterfront Station to New Westminster via the Expo Line, and come back via the Millennium Line (a slightly different route).
We are also visiting Vancouver in May. In the guide books that I have read it says a ride on the Skytrain is worth doing just for the ride and the views.
