Hay is dried grass (and pasture flowers) used to feed domestic animals at places or times where there is not enough (fresh) grass or when fresh grass by itself is too rich in some qualities for easy digestion by the animal.
The stack was made waterproof as it was built (a task of considerable skill) and the hay would compress under its own weight and cure by the release of heat from the residual moisture in the hay and from the compression forces.
Baled hay was discharged from the rear of the baler onto the paddock.

Peter Seton Hay was born in Glasgow, Scotland, probably in 1852 or 1853, the son of Janet (Jessie) Dalziel and her husband, James Johnston Hay, a journeyman engineer.
Hay helped plan most of the important railway works of the central North Island section and was responsible for the primary design of the Makohine, Mangaweka, Hapuawhenua, Taonui, Manganui-a-te-ao and Makatote viaducts.
One of Hay's major achievements was his investigation and report on the proposed Southern Alps rail crossing by the Midland railway in 1903.

A commissary was established in the kitchen of the former Wellington Cafe and Cafeteria when the first restaurant was opened, and when the third restaurant was opened the commissary was moved to the basement of the Elliott Hotel.
The commissary is still maintained in the Bolton and Hay plan of operation where the pies and sweet rolls are baked and the meat is cut and sent to each restaurant ready to cook and serve.
Part of the first year the job of baking pies and cutting meat was alternately done daily by Bolton and Hay and delivered to the restaurants in a two-wheel push cart until one night the cart disappeared and an old Model T Ford truck was purchased and used to make deliveries.
