What he seems most upset about is the problem of "revert wars" happening whenever an author wants to be the absolute authority on a topic and regularly patrols their article to undo any edits that are made to what they consider their "perfect" work?
It's amazing that once you've become free from most of the rules, and are given a simply goal, how people will organize themselves and work toward a common goal.
My rough idea is, pick the 10 most popular articles, 10 random articles of moderate-to-high traffic, 10 random articles of low traffic and then do a compare/contrast against 'reputable' references.

One advantage I've found to writing as a wikibook is that I can copy material from the wikipedia to help me. Though I am writing lots of new material, some of the annoying/well known details don't get in my way (e.g., who can get excited about writing the mathematical definition of a total order?).
You can probably use a macro to do the conversion for you, or export to html then do a search and replace then manual edit, or export to a text file then modify, etc. I would suggest first focusing on the content, then worry about the formatting once the book is done.
The real question here is what boilerplate request-letters to provide contributors to ensure we find out (1) whether they mind their content being edited, (2) whether they want attribution, or want no connection at all with such edited content, (3) whether any changes (on their end) to slowly-changing content can be propagated to WM projects...

Since there are "articles" like list of economics topics, it is easy to see if there are any changes in any economics articles, or almost any subject you can think of.
The history page lists all the changes that have been made to the article, and allows the differences (diff) between any two versions to be displayed.
