The commissary was supplying food to all the big kitchen restaurants, as well as Windows on the World, which would use the commissary minimally, for demi-glace and different stocks, pre-portioned meat, peeled shallots, and other types of basic ingredients.
The windows were not as wide or tall as the ones in the dining room, but the view that passed through them was still enough to take anyone's breath away.

We found that the best way to get the old paint off of the windows and frames was get as much paint off with a heat gun and then use chemical stripper to get the bottom layers then finally mineral spirits, a wire brush and a dental pick to get out the remaining patches.
We realized after we had putty a few of the windows that the lighter colored putty that we used was not going to stain that well, even though it said it was "stainable" We ended up going back and re-doing the putty in mahogany color with Elmer's putty.
Due to having to cover up a lot of putty we had to make the windows a little darker then I would have liked, but I think it should work well.
