There was to be fruit in the temple, spiritual fruit and converts; people pressing in to receive of God's word of truth.

This is a parable and Jesus is using this vineyard in explaining His kingdom.
The "winefat" is the place where the grapes crushed, and it has a troth where the juices run down into a container, and are collected.
The "tower" is a watchtower, and God set up a procedure to watch out for the thief.
