This variation on the classic yassa uses carrots and pimento-stuffed olives to create a rich chicken stew.
When the dish has reached the desired degree of hotness, remove the chile and reserve (it can be served separately to the chile heads).
I added 1 roasted and chopped fresh pimento to the recipe and added it to the yassa along with the pimento-olives.

Mix lemon juice, vinegar and 2 tbsp oil and marinate chicken pieces and onions overnight (or 2 hrs minimum).
Cook long grain rice for 20 minutes or until tender but not completely cooked (until the rice is about 5-10 minutes from done) Add sauce, rice and meat mixture to very large cooking pot and simmer for 30 minutes or until rice is completely cooked.
