The Yuptar were part of the Sentient Milieu the Sentient Milieu which existet several thousand years ago and spanned half the galaxy.
They were one of the 7 throughout the milieu the milieu known races (the others are the Drall Drall, Faz Faz, Mael-Num Mael-Num, Taalo Taalo, Ur-Quan Ur-Quan, Yuli Yuli and the Yuptar Yuptar).
Unlike the Yuli, the Yuptar survived the millennia of slavery only to become the first victim of the Kohr-Ah Kohr-Ah's "Eternal Doctrine" which required the "cleansing" of all non-Ur-Quan races.

This quickly escalated into a war between the Kohr-Ah and the Kzer-Za, which the Mael-Num used to make their escape.

Besides all these, there are alien races that pop up only in discussion with *these* alien races, or ones that pop up if you strike up a conversation about ancient galactic history with someone.
(Some examples: the Precursors, the Gg, the Burvixese, the Yuli, the Yuptar, the Keel-Vereezy, the *Nnngn*, the Mael-Num, the Taalo, the Faz...) There's also a "Hitchhiker's Guide to the Galaxy"-esque humor that pervades the entire game.
I know the game is old -- 1992 -- but if you haven't played it, do so!
