Zuberoa and Mugaritz are near each other in real countryside northeast of the city, but not that far to make a round-trip cab ride uneconomical.
Of the five restaurants, Zuberoa comes the closest to what one can call an "operation." In summer, it serves as many as 100 diners and the rest of the year 75.
Zuberoa was also the most well-greased as we were in and out in exactly two hours.

In Zuberoa we find some of the Basque Country's most interesting ritual dance in the form of the maskaradak.
The costumes at the left, which date to the late eighteenth century, are used for performance of this type of dance.
The participatory dances from Zuberoa include kontra dantzak or quadrilles, danced in groups of couples, dantza jokoak or game dances such as Zuberoako Makil Dantzak, and branlea.

SOULE is the French name of ZUBEROA, the smaller basque region, but the richer in culture and traditions, The main Town of Zuberoa is MAULE.
I think this surname was originated for one man born on Zuberoa, that lived in France (or served in the French army), and as his surname was difficult for the french people, they begin to call him SOULE, because of his origin.
ZUBEROA may well take its name from the village of SIBAS, which is also known as ZIBE(RO)ZE.

 Development of Euskadi
The Basque Country (now known as Euskadi) is located in southwestern Europe on the shores of the Bay of Biscay on the Franco-Spanish border.
This region was traditionally composed of seven provinces, three being French (Lapurdi, Behe-Nafarroa/Lower Navarre and Zuberoa) and four being Spanish (Araba, Bizkaia, Gipuzkoa, and Nafarroa/Upper Navarre).
The populations of the inland provinces of Behe-Nafarroa and Zuberoa were less affected by this immigration and remained mostly Vascophone, but in rich Labourdin province and Bayonne département as a whole Basques became a minority.
